Wash and dry all produce.
Cut @Yukon Gold Potatoes{24%ounce} into 1/2-inch-thick wedges.
Halve, peel, and finely dice @yellow onion{2%unit}.
Halve @potato buns{4%unit}.
Thinly slice @roma tomatoes{2%unit} into rounds.

Spread potatoes on a #baking sheet{} with a drizzle of @cooking oil{1%tbsp}, 3/4 tsp @garlic powder{2%teaspoon} (1 1/2 tsp for 4 servings), @salt{}, and @pepper{}.
Roast on top rack until browned and crisp, ~{25%minutes}.

Meanwhile, in a #small bowl{}, combine @white wine vinegar{10%teaspoon}, 1 TBSP of the diced onion (2 TBSP for 4 servings), 1 tsp @sugar{4%teaspoon}, and a pinch of salt.
In a separate small bowl, combine @ketchup{4%tablespoon}, @sour cream{4%tablespoon}, @dijon mustard{4%teaspoon}, 1 tsp sugar, and remaining garlic powder.

Heat a drizzle of oil in a #large pan{} over medium-high heat. Add remaining onion; cook, stirring occasionally, until browned and softened, ~{7%minutes}. Season with salt and pepper.
Transfer cooked onion to a plate.

While onion cooks, form @ground beef{20%ounce} into 4 patties (two for 4 servings), each slightly wider than a bun. Season generously with salt and pepper.
When onion is done, heat a drizzle of oil in the same pan over medium-high heat. Add patties and cook to desired doneness, ~{5%minutes} per side.
In the last 1-2 minutes of cooking, top each patty with @cheddar cheese{1%cup}; cover the pan until cheese melts.

While cheese melts, toast the buns until golden brown.
Stir pickled onion (draining first) into bowl with special sauce.
Fill toasted buns with patties, griddled onion, tomato, and special sauce. Divide burgers between plates; serve with potato wedges and remaining sauce on the side for dipping.
